Instructions

  1. Marinate the Shrimp: Pat the shrimp dry and place them in a large bowl. Add the olive oil, lemon zest and juice, garlic powder, dried parsley, oregano, kosher salt, and black pepper. Toss everything together to coat the shrimp evenly. Cover and let marinate at room temperature for 15 minutes or refrigerate for 1 hour to enhance flavor.
  2. Prepare the Coatings: In a shallow baking dish, combine Italian seasoned whole wheat breadcrumbs and grated Parmesan cheese. In a separate bowl, beat the large egg until smooth. Line a baking sheet with parchment paper for easy cleanup and set aside.
  3. Coat the Shrimp: Remove the shrimp from the marinade, shaking off any excess liquid. Dip each shrimp first into the beaten egg, allowing excess to drip off, then coat both sides in the breadcrumb and Parmesan mixture. Place the coated shrimp on the prepared baking sheet.
  4. Preheat Air Fryer: Preheat your air fryer to 390 degrees Fahrenheit. Spray the air fryer basket lightly with nonstick cooking spray to prevent sticking.
