Fresh Spinach Dip is a creamy, flavorful appetizer made with sautéed fresh baby spinach, carrots, onions, and water chestnuts, combined with sour cream and mayonnaise for a perfect party dip. Serve chilled with your favorite crackers or fresh veggies.

- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tsp onion powder
- ½ tsp paprika
- ¼ tsp garlic powder

Instructions
- Heat oil and sauté vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add shredded carrot and diced yellow onions, sautéing for 5 minutes while stirring occasionally.
- Add garlic and seasonings: Stir in minced garlic, kosher salt, and black pepper into the skillet. Continue sautéing for 1-2 more minutes, then transfer the mixture into a large bowl and set aside.
- Wilt the spinach: Return skillet to medium heat and add half of the fresh baby spinach. Sauté, stirring occasionally, for 3-4 minutes until spinach starts to wilt. Add remaining spinach and continue to sauté for another 3-4 minutes until completely wilted.
- Drain excess moisture: Transfer the cooked spinach to a colander. Using paper towels, press out as much excess moisture as possible from the spinach, then chop finely.
- Combine all ingredients: Add the chopped spinach into the bowl with onions and carrots. Mix in chopped green onions, sour cream, mayonnaise, chopped water chestnuts, Worcestershire sauce, lemon juice, onion powder, paprika, and garlic powder. Stir until well combined.
- Chill the dip: Cover the bowl and refrigerate the dip for 2 hours or until chilled to allow flavors to meld. For best results, refrigerate overnight.
- Serve: Serve the spinach dip in a bowl alongside crackers, baguette slices, chips, carrot sticks, celery sticks, or bell peppers. Optionally, present the dip in a hollowed-out bread bowl for a festive touch.
Notes
- Pressing out moisture from the spinach prevents the dip from becoming watery.
- Chilling the dip for at least 2 hours enhances the flavor; overnight refrigeration is recommended for best taste.
- Use a variety of dipping options like crackers, fresh veggies, or bread bowls for a fun presentation.
- For a lighter version, substitute mayonnaise with Greek yogurt.
