Description

This festive Christmas Poke Cake combines a moist white cake with vibrant red and green jello flavors soaked into the cake, topped with creamy vanilla pudding and whipped topping, and finished with colorful sprinkles for a delightful holiday dessert.

Ingredients

Scale

Cake

  • 1 (15 oz) box white cake mix, plus ingredients called for on box

Jello Mixture

  • 1 (6 oz) box strawberry jello
  • 1 (6 oz) box lime jello
  • 2 cups boiling water

Topping

  • 1 (3.4 oz) box instant vanilla pudding mix
  • 1 cup milk
  • 1 (8 oz) container frozen whipped topping, thawed
  • Red and green sprinkles or decorations

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F or temperature called for on back of cake mix packaging. Grease a 9x13-inch baking dish with butter or nonstick spray. Set aside.
  2. Mix and Bake Cake: In a mixing bowl, prepare the white cake mix according to the package instructions. Pour the batter into the prepared baking dish and bake as directed on the package, typically around 30 minutes or until a toothpick inserted comes out clean.
  3. Cool and Poke Holes: Remove the cake from oven and let it cool for 15 minutes. Using a fork or the handle-end of a wooden spoon, poke holes across the cake at 1-inch intervals. Allow the cake to cool further while preparing the jello.
  4. Prepare Jello: Dissolve each jello box (strawberry and lime) separately in 1 cup of boiling water, stirring until fully dissolved.
  5. Add Jello to Cake: Pour the red and green jello alternately in rows over the cake, ensuring the jello seeps into the holes. You may not use all the jello. Place the cake in the refrigerator to chill for about 15 minutes.
  6. Make Topping: In a bowl, whisk together the instant vanilla pudding mix and milk until thickened. Gently fold in the thawed whipped topping until fully combined.
  7. Top and Chill: Spread the pudding and whipped topping mixture evenly over the chilled cake. Return the cake to the refrigerator and chill for an additional 2 hours to fully set.
  8. Serve: Before serving, decorate the cake with red and green sprinkles or festive decorations. Slice and enjoy your Christmas Poke Cake!

Notes

  • The festive flavors of strawberry and lime jello run all the way through the cake, making it flavorful in every bite.
  • Use a sturdy fork or wooden spoon handle to create deep enough holes for the jello to soak in thoroughly.
  • If you prefer, you can substitute fresh whipped cream instead of frozen whipped topping for a fresher taste.
  • The cake needs adequate chilling time to let the jello set and the topping firm up, so plan ahead for at least 3 hours of total chilling.
  • Feel free to customize the sprinkles and decorations to match your holiday theme.
