Instructions

  1. Bloom The Gelatin: Pour 1/2 cup of the juice into a liquid measuring cup or small bowl. Sprinkle gelatin powder evenly over the juice and stir to combine. Let it sit for about 5 minutes until the gelatin thickens and looks grainy and very thick.
  2. Heat The Remaining Juice: While the gelatin is blooming, add the remaining 3 1/2 cups of juice to a medium saucepan. Heat over medium-high heat until the juice is steaming hot but not boiling.
  3. Melt The Bloomed Gelatin: Add the honey or other sweetener (if using) along with the bloomed gelatin into the hot juice. Stir thoroughly until the gelatin and sweetener are completely dissolved to ensure smooth texture.
  4. Set The Jello: Pour the gelatin mixture into a 2-quart ceramic pan or heatproof container (sizes like 8x8, 9x9, or 11x7-inch work well). Cover with plastic wrap and refrigerate for at least 3-4 hours, or until fully set.
  5. Serve & Store: Once set, serve immediately or store in the refrigerator. For the best texture and flavor, consume within 4-5 days. The jello may remain good up to 7-10 days but might lose texture over time.
