Description

A simple and flavorful one pot lemon herb chicken and rice dish that combines tender chicken breasts with aromatic Italian seasoning, butter, and fresh lemon juice. Cooked together in a single pan for an easy and delicious meal ready in 30 minutes.

Ingredients

Scale

Chicken and Seasoning

  • 4 boneless skinless chicken breasts
  • 2 tablespoons butter
  • salt and pepper to taste
  • 2 teaspoons Italian seasoning

Rice and Broth

  • 1 cup uncooked white rice
  • 2 ¼ cups low sodium chicken broth
  • juice of 1 lemon
  • 1 teaspoon Italian seasoning

Instructions

  1. Prepare the Chicken: Melt butter over medium heat in a large skillet or pan with a lid. Season the chicken breasts with salt, pepper, and 2 teaspoons of Italian seasoning. Brown the chicken in the melted butter for 1 to 2 minutes on each side, ensuring the chicken is not fully cooked through. Then, transfer the chicken to a plate.
  2. Cook the Rice: In the same pan, add the uncooked white rice, chicken broth, lemon juice, and the remaining 1 teaspoon of Italian seasoning. There is no need to clean the pan first to retain the flavors from the chicken.
  3. Simmer Together: Place the browned chicken breasts on top of the rice mixture. Cover the pan and simmer over medium-low heat for 25 minutes until the rice has absorbed the liquid and is tender, and the chicken is fully cooked.
  4. Serve: Garnish with fresh parsley or cilantro and lemon wedges if desired. Serve immediately for a comforting and flavorful meal.

Notes

  • This dish cooks all in one pot, making cleanup simple and saving time.
  • Use low sodium chicken broth to control the saltiness of the dish.
  • Fresh lemon juice adds a bright flavor, but lemon zest can also be added for extra zing.
  • Garnish with fresh herbs like parsley or cilantro for color and freshness.
  • Make sure not to fully cook the chicken when browning to ensure juicy and tender meat after simmering.
